Ingredients:
Ingredients Meats
1 kilo Beef sirloin, sukiyaki cut
1 kilo pork kasim, sukiyaki cut
1 kilo pork tocino, sliced into strips
1 kilo chicken balls, quartered
1 kilo chicken breast fillet, sliced into strips
1 kilo white medium sized-shrimps, shelled and de-veined
1 kilo squid, ink sacs removed, cleaned and sliced into rings

Vegetables and starches
1 head cabbage (about 1 kilo)
1 kilo white onions, sliced
1/2 kilo bean sprouts (togue)
1/2 kilo julienned carrots
1/2 kilo bell pepper slices
25 cups Rice, plain, cooked

Garnishes and spices
1 cup toasted sesame seeds
1 cup chopped spring onions
1 cup minced garlic
1 cup soy sauce
1 cup brown sugar
1 cup sesame oil
1/2 cup grated ginger
1/2 cup chili garlic oil

vegetable oil for stir frying Teriyaki Sauce
1/3 cup chopped white onions
3 tbsp grated ginger
1/3 cup brown sugar
1/2 cup soy sauce
2 tbsp honey
2 tbsp rice wine
2 tbsp Hoisin sauce
1 cup water

Sate Sauce
1/2 cup peanut butter
1/2 cup soy sauce
1/3 cup sherry
8 cloves Taiwan garlic, crushed
1 tbsp grated ginger
1/3 cup brown sugar
1 cup water

Barbecue Sauce
1/2 cup brown sugar
4 cloves Taiwan garlic, crushed
1/2 tsp ground black pepper
1/2 tsp iodized salt
1/2 cup tomato sauce
1 cup Sprite
1/2 cup soy sauce

Suggested combinations:
1) “The Great Kublai”—Best with pork and beef. Sweet and Spicy Barbecue flavor.
4 tbsp barbecue sauce
1 tbsp soy sauce
1/2 tbsp garlic
1/2 tsp chili garlic

2) “Temujin’s Bowl”—Best with chicken. Sate flavor.
4 tbsp sate sauce
1 tbsp sesame oil
1 tsp chili garlic

3) “Sweet Beijing”—Best with seafoods. Sweet Teriyaki flavor.
4 tbsp teriyaki sauce
1 tsp garlic
2 tsp brown sugar
1 tsp sesame oil
1/2 tsp sesame seeds

4) “Fiery Mongols”—Best with Beef. Spicy ginger flavor.
4 tbsp teriyaki sauce
1/2 tsp chili garlic
2 tsp soy sauce
1 tsp ginger

Directions:
1. Prepare the sauces–Teriyaki, Sate, and Barbecue–by combining each of their ingredients in a saucepan. Simmer for a few minutes, then transfer to serving bowls. Set aside.

2. Arrange the rest of the ingredients for the bar in serving dishes, buffet style. Prepare single-serve bowls for your guests’ preparation.

3. Bowl Assembly: Guests should combine meats and vegetables of their choice (about 1/2 cup). Add 1 cup of rice. Season with various prepared sauces and condiments.

4. Heat oil in a griddle or skillet. Stir-fry rice-meat mixture until meats are cooked through and ingredients are well blended. Serve immediately.
